Zucchini Squash Boats

Got a surplus of zucchini squash and running out of things to do with them? I love making this quick squash boat recipe with a spicy meat sauce. It’s a great way to get loads of veggies and fiber in and use up that squash.

INGREDIENTS:

3-4 Large Zucchinis or Yellow Squash 

1 Onion Diced 

3 Carrots Peeled and diced 

2 – 3 Jalapeno or Hot Peppers if you like spicy

2-3 Bell Peppers

Small Bunch of Cut asparagus, Green Beans or Wax Beans

1 Small Yellow Squash 

2 Handfuls of Spinach or Greens (optional)

Jar of Victoria Marinara Sauce or Rao’s

1 lb of Ground Bison or meat of your choosing

Handful of Chopped Parsley

Italian blend, fresh mozzarella or parmesan cheese (optional)

Prepare:

  1. Cut your zucchini’s in half and scoop out the seeds hollowing them out a little creating a little boat. 
  2. Brown your bison and then add in raw onion and peppers with a dash of salt for 3-5 minutes until softened. 
  3. Add in the carrots and the jar of sauce and stir and bring to a simmer. 
  4. When the carrots are mostly softened, add in the squash and asparagus. I save these for the end so they don’t turn into complete mush. 
  5. Let it sit for about 10 minutes or better overnight before adding to the boats.
  6. Fill your boats and either bake them at 425 or toss them on the grill until you can get a fork through them. (approximately 30 minutes)
  7. Either top with cheese after they are cooked or add it the last 10 minutes.
