Cabbage, Potatoes, and White Beans

This is a great breakfast combo that kicks up your regular potatoes and adds some amazing fiber and carbs. This flavor combo seems odd, but is really a delicious combo.

INGREDIENTS:

  • 3 small golden potatoes
  • 1 TBS of Butter or Ghee
  • 1 Onion Diced
  • 1 15-oz can white beans, rinsed and drained
  • 1 tsp ground coriander
  • 1/4 tsp ground sage
  • 1/2 tsp dried thyme
  • 1 small green cabbage any variety diced up in smaller shreds
  • Salt and Pepper to taste

PREPARE:

  1. Cut the potatoes in cubes and cook until starting to get soft in the butter in a pan. Covering the pan helps them cook and soften without burning. Low and slow for this step.
  2. Toss in the diced onion until soft about 5-6 minutes (If they start to brown too quickly you can add a pinch of water to the pan)
  3. Toss in the seasonings and cabbage and cover to steam for a few minutes until the cabbage is softened and brightening up.
  4. Add in the beans and let them brown up a bit.
  5. Salt and pepper to taste and enjoy.
