This is a slow cooker version of Pasta Fagioli. On cold busy days, nothing is better than a hearty one pot meal.
INGREDIENTS:
- 1lb of Bison or Ground Meat of choice
- 1 Onion peeled and diced small
- 2 Carrots peeled and diced small
- 2-3 Celery ribs diced small
- 15 ounce can of Tomatoes (Undrained)
- 15 ounce can of Cannellini beans
- 26 ounces of Beef stock
- Jar of Pasta Sauce (I like Rao’s)
- 2 tsp of dried Oregano
- 2 tsp of dried Parsley or bunch of fresh during and then at the end.
- 1 TBS Hot pepper seeds (Optional for kick)
- 1 tsp of Pepper
- 1/2 TBS of Sea Salt
- 1 Cup of favorite small pasta bits (I use jovial GF shells or elbows)
PREPARE:
- Pre brown meat and crumble. (You can make this ahead if needed)
- Drain excess grease and fats.
- Add all ingredients to your slow cooker. (Except Pasta)
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- During the last 30 minutes of cooking add in the pasta and stir until it is cooked through.
- You can also pre make your pasta and add it for the last 10 to heat through if preferred.
- Top with your favorite fresh herbs like parsley.
- Top with some fresh grated parmesan cheese. (Optional for cheese lovers)
- Delicious complete one pot meal on cold poopie days.
