Sweet Potato Toasts 3 Ways

I love these when I really want to increase my vegetables and get a good amount of carbs and healthy fats in.

INGREDIENTS:

  • 1 Sweet Potato Peeled and Sliced Thin into Toasts
  • 1/2 to Whole Banana
  • 1 TBS of Nutbutter of your choice
  • 1 Radish Sliced Thin
  • 1 TSP of Lime Juice
  • 1/2 to Whole Avocado
  • Pinch of Unsweetened Coconut Flakes
  • Pinch of Hot Seeds (Optional for kick)
  • Pinch of Cinnamon
  • 1 Slice of Bacon cut into pieces cooked
  • 1 TBS of Pecans or Walnuts (Optional)
  • Butter, Coconut Oil, Ghee, Or Avocado oil to brush the Sweet potato Slices
  • 1/4 cup blueberries berries of choice

PREPARE:

  1. Prep the sweet potatoes and pre heat the oven to 425.
  2. The bigger the sweet potato the bigger the surface area to pile on.
  3. Cut them into 1/4 to 1/2 inch thickness.
  4. Brush each side with a little fat and bake for 20 minutes or until tender. You can flip halfway through.
  5. Top each slice how you like.

Blueberry Slice:

Top with:

  • Nut Butter
  • Berries
  • Sprinkle of Coconut
  • Sprinkle of Cinnamon

Banana Slice:

Top with:

  • Nutbutter
  • Sliced bananas
  • Nuts of Choice
  • Bacon Crumbles

Avocado Radish Slice:

Top with:

  • Mashed Avocado
  • Hot seeds
  • Splash of lime juice
  • Sliced Radishes
