Loaded Cauliflower Mushrooms and Onions

Sometimes when people try and up their vegetable intake, they add bland things in, hate them, and then revert to tastier options.

Having fun with vegetables can help get over that food boredom hump and get you to bulk up your veggie game. Some people love vegetables as is, but most need a little pizzaz to help build that habit up.

This is a favorite simple side dish that helps up your vegetable intake but also tastes really good.

INGREDIENTS:

  • Head of Cauliflower cut into chunks
  • 1 Onion Diced
  • 1 – 2 Cups of Brown or White Mushrooms Quartered
  • 1/2 Cup to 1 Cup Marinara Sauce
  • 1/2 Cup to 1 Cup Mozzarella Cheese Shredded
  • 10-20 Slices of Uncured or Turkey Pepperoni
  • 1/2 Cup Olive Slices (Optional)
  • 1 Tsp Hot Seeds (Optional):
  • 1/4 Cup Sliced Fresh Jalapeños (Optional)
  • 1 TBS of Olive Oil or Olive or Avocado Spray
  • Pinch of Salt and Pepper
  • 1 Tsp Italian Seasoning

PREPARE:

  1. Preheat your oven to 475.
  2. Toss veggies in a little oil or spray and salt.
  3. Place on a pan giving them a little space and cover.
  4. Bake for 12 minutes covered.
  5. Uncover and bake an additional 9 to 10 minutes.
  6. Stir around and add toppings and seasonings like a pizza.
  7. Bake for an additional 10-15 minutes until vegetables are cooked through and pepperoni is browned up.
  8. Enjoy a delicious vegetable loaded lower carb side.
