Fresh Garden Tomato Sauce

With gardening season well under way a lot of people are swimming in their tomatoes.

This is my favorite go to for a light summer sauce that tastes like your garden smells.

INGREDIENTS:

2-3 TBS Bone Broth

1 small Onion

1 – 2 lbs of Ripe Tomatoes

2 Cloves Garlic (Optional)

1 tsp honey or sugar

1 tsp dried or fresh oregano

3 TBS Extra Virgin Olive Oil

3 TBS Fresh Garden Basil

Sea Salt and Pepper to Taste

PREPARE:

Chop the onions and garlic and let them sit.

Cut the top of the tomato and squeeze out the seeds, then dice them up.

In the broth, sauté the onion and garlic until a little soft 2-3 minutes

Add in tomatoes, honey, oregano, salt and pepper and simmer covered until the tomatoes are soft. This takes about 5 minutes.

Remove from the heat and toss in fresh EVOO and Basil. Mix well breaking up the large pieces. You can also blend it is you want it smoother or use a hand blender.

This pairs well with fresh pasta, gnocchi, ravioli, fresh mozzarella etc.
